Raspberry Chia Pudding

2021 is here!

Which means a fresh start and time to try new things.

I personally never made chia pudding. Crazy right! I always loved the way it looked but never dared to try it for some reason. I have truly fallen in love with the consistency and can not wait to try more different variations. But for now, let’s share this delicious raspberry version I created first!

Ingredients:

For 1 serving

  • 500 grams of frozen raspberries
  • 1 banana
  • 2 tablespoons chia seeds
  • 1/2 cup of plant based milk of your choice
  • 2 fresh raspberries
  • Option: granola

Directions:

In a container or jar mix the chia seeds and that plant based milk. Put on the lit and leave it in the fridge for at least 2 hours, but preferably overnight. If you would like you can add a sweetener like date or maple syrup for some extra sweetness.

In the mean time take 300 grams of the raspberries and heat them up in a pan until some of them start to fall apart and you are left with a thick raspberry sauce. In your jar place the raspberry sauce on the bottom. Now take the chia pudding out of the fridge and add it on top of the raspberry sauce.

Finally add a banana and the leftover 200 grams of frozen raspberries in a blender and mix until you get a thick smoothie consistency. Place this on top of the chia pudding and add some fresh raspberries and if desired granola on top.

It’s ready to be served!
