
In need of a quick, filling and delicious breakfast?
These apple pie overnight oats are great to make at the beginning of the week and just have them ready for a busy morning.
The topping can be added to the overnight oats warm or cold which makes this recipe super versatile!

Ingredients (for 2 portions):
- 1 1/2 cup oats
- Almond milk
- Apple syrup
- Gingerbread spice
- 1 apple
Directions:
In a container with a lid, add the 1 1/2 cup of oats and add as much almond milk as needed to cover all the oats. Mix in about 1/2 teaspoon of gingerbread spice and add the lid on top of the container. Place the container in the fridge overnight. About 15 minutes before you want to eat the overnight oats, cut the apple into cubes and cook it in a pan with a tiny bit of water, 1/4 teaspoon of gingerbread spice and a teaspoon of of apple syrup. Make sure they get nice and soft but still keep their squared shape.
Now take the overnight oats out of the fridge, place it in some nice glass jars and add the warm apple mix on top.

Now it is time to enjoy!
