Poke Bowl

I am back with another recipe and this time it is a delicious poke bowl!

I won’t make this introduction to long this time, let’s just get started!

Ingredients:

  • 1 cup of cooked rice
  • 1 carrot
  • 1/4 of a cucumber
  • 1/4 cup of edamame beans
  • 1/2 a mango
  • 1/2 an avocado
  • 1/2 block of tofu
  • 2 tablespoon of seaweed
  • balsamic vinegar
  • sesame seeds

Directions:

For one poke bowl use 1 cup of cooked rice. Personally I used whole grain rice and I made sure that it was completely cooled down before adding it to a bowl. After that start cutting the tofu into cubes and add them to a container. Pour over some balsamic vinegar so the tofu can soak it up completely for some extra taste. Let it soak up for about an hour.

In the mean time cut up all the other ingredients. Cut the cucumber and mango into cubes, the avocado into slices and grate the carrot.

Now that everything has been cut, bake the tofu into a pan until nice and crunchy.

Now add all the ingredients on top of the rice in different section. So the cucumber, carrot, edamame, mango, avocado, tofu and seaweed.

For something extra on top you can sprinkle on some sesame seeds and of course you can pour over a bit of soy sauce as well.

Now it is time to enjoy your freshly made poke bowl!
